You never type a time into this app. You point at one.

In the day or week view every half hour is its own small box. Tap the empty box at the time you want and the booking window opens already set to that time — and, if you have staff, to that person's column.

Pick the service from your own list, pick the customer, save. A service that is not on the list goes in as “Something else…” and you type it.
